Say cheese! This burrata and heirloom tomato salad is a picture perfect addition to your next summer barbeque or picnic menu. The creamy burrata in this recipe is sourced from Vermont as part of our effort to connect to food hubs up and down the East Coast. This vegetarian recipe is peak summer flavors with heirloom tomatoes and basil pesto. The measurements below will serve five people, but you can easily scale up for larger gatherings.

Here is how to make this recipe with purpose-fueled food that’s better for the prosperity of our planet and people.


Ingredients

  • 8 oz. burrata cheese
  • 2 lbs. heirloom tomatoes, sliced
  • ½ cup basil pesto
  • Salt and pepper to taste

Directions

Thinly slice your heirloom tomatoes. Drain and pat dry your burrata. 

Layer the burrata and the tomatoes while gently breaking apart the burrata. Drizzle the ½ cup of basil pesto over the top of the salad. Salt and pepper to taste. 

Enjoy fresh summer produce and delicious Vermont cheese.
