One Pan Black-Eyed Peas & Collard Greens New Year’s Stew Dinner Recipe image

Manifesting good luck and prosperity in the New Year is easy pea-sy with this stew recipe. All you need for this recipe is one pan. The black-eyed peas from 4P Foods are already rehydrated, so the cooking time is much shorter. This recipe serves six and can be easily scaled up for larger gatherings. Plus, it’s a stew, so it is great for the cold winter weather. Here is to the New Year! Enjoy!

Ingredients

1 lb. black-eyed peas

4-5 thick slices bacon, chopped

5 ounces smoked sausage or turkey, diced

1 large onion, diced

1 stalk celery, diced

2-3 tsp. garlic, minced

2 tsp. fresh thyme, minced

1 bay leaf

1-2 tsp. creole seasoning

7-8 cups chicken broth

2 cups collard greens 

Salt and pepper to taste


Directions

In a large pan, saute the bacon until brown and crispy. Add sausage into the pan and saute for 2-3 more minutes. Remove bacon and sausage mixture and set aside.

In the same pan, saute onions, celery, garlic, thyme, and bay leaf, and saute for 3-5 minutes or until the onions are translucent. 

Add all of the chicken broth and black-eyed peas to the pot. Season with salt, pepper, and creole seasoning. Stir and then bring to a boil.

Reduce heat and simmer for 20 minutes.

Stir in collard greens, bacon, and sausage. Simmer for 10 more minutes. The stew should be thick, but not dry. Remove the bay leaf. Stir again and serve over rice or with bread for dipping.
