Impress the guests at your barbeque with flavor and your plating skills by turning this tasty salad into an American flag. This early summer dish is a great side to grilled protein. The balsamic vinaigrette dressing is tart and goes well with the sweet blueberries and creamy feta. The perfect vegetarian addition to a cookout menu this side dish is quick to make. It serves four people, but can easily be scaled up for larger gatherings. Every bite gets feta and feta with this salad.

Here is how to make this recipe with purpose-fueled food that’s better for the prosperity of our planet and people.


Ingredients

  • 4 cups of arugula 
  • 1 cup tomatoes, roughly chopped
  • ½ cup blueberries
  • ½ cup feta cheese
  • ½ cup cucumber, roughly chopped
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 2 tbsp. honey
  • 2 tsp. mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions

Whisk together the balsamic vinegar, honey, mustard, minced garlic, pepper, and salt. Once that is combined, slowly whisk in the olive oil by pouring the olive oil and whisking at the same time.

Toss together the cucumber and arugula in a large mixing bowl. Then, arrange the blueberries, feta, and tomatoes on top to resemble the American flag. This is just for presentation; the salad will need to be tossed before serving.

PRO TIP: Do not add your dressing until you are ready to serve. This will keep your salad from getting soggy.
