Delicious organic hummus and pickled carrots on a locally made greek style pita! This recipe is simple to make and packed with flavor. The ingredients are mostly available all year, but the cucumber and cherry tomatoes may need to be substituted or left out of the wrap. Pasture-raised chicken works great in this recipe, but organic tofu or humanely-raised beef would taste delicious as well. This recipe serves one person, but you will want to re-pita it and make more.

Ingredients
1 greek style pita
1 tbsp. organic hummus
5 cherry tomatoes
⅛ cup pickled carrots
⅛ cup feta
¼ cucumber
3 leaves bibb lettuce
Drizzle of olive oil
⅛ cup rice
Your choice of protein (optional)
Directions
Toast your pita in an air fryer or oven until warm, flexible, and soft. Spread hummus on top of the pita. Add rice and your choice of cooked protein.
Slice tomatoes, cucumbers, pickled carrots, and lettuce into bite sized pieces. Add all vegetable ingredients to your wrap.
Crumble feta cheese on top. Drizzle with olive oil. Enjoy your quick lunch!
