Talking turkey sausage! This quick turkey sausage and bell pepper skillet recipe is a great weeknight recipe for back to school and really a delicious recipe for all year round. You will need a skillet and stove for this recipe, and it makes 4 to 6 servings. Pasture-raised turkey sausage and locally grown bell peppers make a filling and nutrient-dense meal. With the prep and cook time, this recipe should take less than 30 minutes.

Here is how to make this recipe with purpose-fueled food that’s better for the prosperity of our planet and people.


Ingredients

  • 2 tbsp. olive oil

  • 4 turkey sausage links (pick your favorite flavor)

  • 1 onion, chopped

  • 2 bell peppers, chopped

  • 3 garlic cloves, minced

  • Salt and pepper to taste


Directions

Heat 1 tbsp. of olive oil in the skillet over medium heat, and cook the turkey sausage until browned. Once cooked, remove the sausage from the pan and let it cool slightly.

Increase the heat of the skillet to medium-high heat and add the last tablespoon of olive oil to the pan. Sautee the chopped onion until slightly translucent. Then, add the chopped bell pepper to the skillet, and keep stirring while it cooks. Add minced garlic to the skillet and continue to cook for another minute.

Reduce the heat to medium. Chop the sausage into bite sized pieces. Add the sausage back into the skillet and cook until no longer pink in the center.
