This recipe isn’t mediokra! This quick fried okra recipe is perfect as a summer snack or a side dish to pair with your favorite main course. This recipe serves six, making it perfect as a summer snack or a side dish to pair with your favorite main course. Start by slicing fresh okra into bite-sized pieces. Heat up a pan with a drizzle of olive oil, then add the okra and cook until it turns bright green. Sprinkle some salt, pepper, and your favorite seasoning (like garlic powder or paprika) for an extra kick.

Ingredients

  • 1 1b. fresh okra 
  • 1 cup buttermilk
  • 1 cup all purpose flour
  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1 teaspoon fresh ground pepper
  • 3 cups vegetable oil for frying
  • 1/4 teaspoon paprika (optional)
  • 1/4 teaspoon chili powder (optional)
  • 1/8 teaspoon garlic salt (optional)

Directions

Wash okra and cut it into 1/2 inch slices.

Place buttermilk in a shallow dish.

Mix flour, cornmeal, and seasonings together in another dish.

Dip okra slices in buttermilk and then through flour mixture, coating all sides.

Place in a single layer on a baking sheet.

Heat oil in a heavy skillet or pan to 350°.

Fry okra in batches for about 3- 4 minutes (until they turn bright green), stirring to keep them separated.

Remove to a paper towel lined wire rack to drain.

Season with additional seasonings if desired.
