This autumn and winter recipe is colorful, comforting, and serves six people. Roasted purple sweet potatoes will look very impressive at a holiday meal or weeknight dinner, but the good news is this recipe is very simple to make.

Ingredients
- 3 medium purple sweet potatoes, sliced
- 2 tbsp. Butter, melted
- 1 sprig rosemary, minced
- 2 cloves garlic, minced
- Salt and pepper to taste
Directions
Preheat your oven to a high broil.
Place a pot of salted water on the stove and bring that to a boil.
Slice your purple sweet potatoes into disks. Place the sweet potato disks into the boiling water. Cover the pot and boil the potatoes for 15 minutes or until the potatoes are tender.
In a bowl, gently stir together the melted butter, rosemary, and garlic.
Remove the potatoes from the water and drain on a kitchen towel or paper towel. Place the potatoes on a baking sheet and gently press down on each potato slice with the back of a fork. Spoon the rosemary and garlic butter mixture onto each potato.
Place the baking sheet into the oven to broil for 10 minutes or until the potatoes are crispy on the outside.
Remove from the oven and season to taste with salt and pepper. Enjoy while still warm.
